Vegan Nachos – Low Fat

Servings: 4 (normal), 1 if it's me

Description:

No oil, no cheese vegan nachos. Try these on a Sunday when you're watching your favorite football team!  Note:  I also use this sauce over broccoli and other vegetables.  It's the best!

Ingredients:

  • 1/3 cup raw cashews
  • 2/3 cup non-dairy milk
  • 2 tsp yellow miso paste
  • 1/2 tsp lemon juice
  • 2 tsp cornstarch
  • 2 tbsp roasted red bell pepper or pimentos
  • 1/2 tsp cumin
  • 1/2 tsp fresh ground black pepper
  • 2 tbsp nutritional yeast
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper
  • 1/4 tsp crushed red pepper flakes

Instructions:

Place all ingredients in a food processor and blend until creamy. Put into a saucepan and cook over low to medium heat.  Stir occasionally until thick.  Serve immediately.
