No oil, no cheese vegan nachos. Try these on a Sunday when you’re watching your favorite football team! Note: I also use this sauce over broccoli and other vegetables. It’s the best!
- 1/3 cup raw cashews
- 2/3 cup non-dairy milk
- 2 tsp yellow miso paste
- 1/2 tsp lemon juice
- 2 tsp cornstarch
- 2 tbsp roasted red bell pepper or pimentos
- 1/2 tsp cumin
- 1/2 tsp fresh ground black pepper
- 2 tbsp nutritional yeast
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
- 1/4 tsp crushed red pepper flakes
Place all ingredients in a food processor and blend until creamy. Put into a saucepan and cook over low to medium heat. Stir occasionally until thick. Serve immediately.
